Cheesy Beef Hash Brown Cups

For the Filling:

• 1 lb (450 g) shredded cooked  beef (pot roast, brisket, or roast beef)
• 1/2 cup BBQ sauce (optional)
• 1 cup shredded cheddar cheese
• 1/2 cup shredded mozzarella cheese

Directions

1. Preheat oven to 400°F (200°C) and grease a 12-cup muffin tin.
2. In a large bowl, combine the hash browns, melted butter, salt, and pepper.
3. Press the hash brown mixture firmly into the muffin cups, creating a nest shape.
4. Bake for 20–25 minutes, or until golden brown and crispy.
5. Mix the shredded beef with the BBQ sauce, if using.
6. Fill each hash brown cup with the beef mixture.
7. Top with cheddar and mozzarella cheese.
8. Return to the oven and bake for 8–10 minutes, until the cheese is melted and bubbly.
9. Let cool for 5 minutes before removing from the muffin tin.
